Let it dry cut it to the shape of the hole. Sanded and applied joint compound. After it dried the insulation is of course soft so now the joint compound is cracking.

The foam baord is a good idea and it's OK to apply it directly over the boards with SR directly on it. SR screws come in many lungths. 1.25" is probably the shortest that I have seen. 1-5/8" is standard for ceilings. 2-1/2" or so should do you with one inch foam board. Tape the seams in the foam board to make it a decent vapour bar.

No it won't. You may be able to get the compound on the product but it will not stick appropriately nor will it stay intact. It would crack and fall off. We have done many jobs similar to to what you are describing in terms of scribing up to an irregular edge. (IMHO: I think the "Foam Board" is a bad idea for what you want to achieve)
